Avocado Tuna Boats
Ingredients:
- 1 6oz. can wild caught tuna (or wild caught salmon, if preferred)
- 2 ripe avocados (cut in half and pitted)
- 3 tablespoons paleo mayonnaise
- 4 tablespoons relish (or cucumber pieces for whole30)
- 1 green onion (sliced in small rounds)
- black pepper flakes (to taste)
- 1 lemon
Directions:
For the filing combine all the ingredients (except the avocados) and mix.
Cut the avocado in half and squeeze fresh lemon juice on top, sprinkle with S & P.
Fill the avocado halves with a large scoop of filling (I use an ice-cream scoop for this). Top with more green onion and fresh thyme leaves if you want.
