How to Roast a Spaghetti Squash
Ingredients:
- 1 large spaghetti squash
- 1 Tbsp olive oil
- 1 pinch sea salt and pepper
Directions:
Preheat oven to 400 degrees F and line a sheet tray with parchment paper or foil. Using the tines of a fork, prick the outside of the squash a few times and then place in the microwave on high for 3 minutes. Remove and carefully halve spaghetti squash lengthwise using a sharp knife. You may need to wait a few minutes if it is too hot to handle. Use a spoon to scrape out the seeds and most of the stringy parts.
Drizzle the interior with oil and sprinkle with a little salt and pepper. Place cut-side down on baking sheet. Roast for 40-45 minutes, or until a knife easily pierces the skin and flesh. Remove from oven and set aside.
Once slightly cool, flip squash flesh-side up and use a fork to scrape to create “spaghetti”.
