Oven Roasted Tomatoes

Ingredients:

  •  Any tomato will do but the grape and cherry tomatoes are perfect for this.
  • 2. Garlic 3-4 cloves, minced
  • 3. Olive oil
  • 4. S & P
  • 5. Thyme, rosemary, oregano (fresh or dry) whatever you have

Directions:

Preheat oven to 400 degrees. Line a baking sheet with parchment paper or aluminum foil. Cut tomatoes into small bite size pieces (for cherry and grape tomatoes, just cut in half). Add a drizzle of olive oil and a pinch of salt and pepper. Add fresh herbs from the garden or a pinch of dried thyme, oregano, rosemary. Toss to coat. Place in oven for approximately 15-20 minutes. Take out of oven and add garlic, toss again to combine. Place back in oven for another 10-15 minutes until tomatoes begin to caramelize around the edges. Top any protein or veggie with this sweet goodness!
