Panko Crusted Salmon
This is an amazingly tasty twist on salmon! Try it, I bet your family will love it!
Ingredients:
- 4 salmon filets
- 3 tbsp. Dijon mustard
- Zest of 1 lemon and 2 drops of doTerra’s lemon essential oil
- 1/4 tsp dried thyme
- ¼ tsp Salt
- ⅛ tsp pepper
- 3/4 cup panko bread crumbs (I prefer Ian’s brown rice bread crumbs)
- 2 tbsp. olive oil
Directions:
Preheat the oven to 375 degrees.
Sprinkle the salmon with salt and pepper. Spread the mustard evenly on each salmon fillet and rub over top to coat.
In a bowl, combine the breadcrumbs, lemon zest, thyme, and olive oil. Sprinkle a thick layer of the bread crumb mixture on top of each filet (over the mustard). Spray each filet with cooking spray just to moisten the pretzels.
Place the fillets on a baking tray that has been lined with tinfoil for easy cleanup.
Cook for 15 minutes or until the topping becomes slightly brown and crispy and the salmon is just cooked through. The mustard gives this dish a unique flavor that can’t be beaten!!
