Roasted Sweet Potatoes
Ingredients:
- 1 lb. sweet potatoes peeled and cubed into 1" pieces
- 1 tbsp. extra-virgin olive oil
- Kosher Salt
- Freshly ground black pepper
Directions:
Preheat oven to 450º. On a large baking sheet, toss sweet potatoes with oil and season with salt and pepper. Roast until tender, tossing halfway through, 30 to 35 minutes.
